Low-cal chicken alfredo with whole wheat penne and roasted vegetables

Recipe Ingredients for Chicken Alfredo

7 oz whole wheat penne pasta
2 cups chicken
1 cup mozzarella cheese, shredded
2 cups broccoli
1 cup portabella mushrooms
1 yellow onion
4 oz green chiles
15 oz Classico Alfredo Sauce
1/2 cup 2% milk

Recipe Directions for Chicken Alfredo

  1. Layer broccoli and mushrooms on a roasting pan. Spray with non-stick cooking spray and sprinkle with salt-free seasoning. Roast at 400 degrees for 20 minutes or until crisp-tender.

  2. Meanwhile, saute diced onion in a pan until just beginning to soften, then add leftover shredded roast chicken and cook until heated through. Add 1 can diced green chiles and mix well.

  3. Cook pasta to al dente, then drain and rinse. In a large casserole dish, combine all components and mix well. Top with a sprinkling of mozzarella cheese and some more no-salt Italian seasoning and bake at 400 degrees for about ten minutes or until cheese is melted and bubbly.
