Simple dish that the Vietnamese cook in our little Enlisted Man's Club at Monkey Mountain, Vietnam use to whip up back in the early 70's. Since I love peppered food, this was one of my favorite dishes over there and remained a favorite back here.

Recipe Ingredients for Chicken Ala Nam

10 oz Chicken Breast, Meat Only, sliced and diced
2 tbsp Olive Oil
1 large Onion, sliced and partialy diced
1 Black Pepper, Lots and lots and lots
1 Salt to taste

Recipe Directions for Chicken Ala Nam

  1. Place oil and onions in a large skillet.

  2. Cook onions until they are transparent and slightly brown.

  3. Add chicken.

  4. Add salt to taste.

  5. Add pepper. I use so much pepper that the chicken just about turns black.

  6. Cook until chicken is well done. I will often microwave chicken while onions are browning, then add chicken and cook until it starts to brown.

  7. Stir chicken and onions several times while cooking.
