Recipe Ingredients for Chicken ala General Tso

1 cup Rice, Brown, Medium-grain, Cooked
0.31 cup Cornstarch
16 oz Stir Fry Vegetables with Sno Peas
8 pieces Garlic Cloves
4 tsp Ginger, Ground
0.375 cup, packed Sugars, Brown
4 tbsp Soy Sauce
1 tsp Spices Crushed Red Peppers
2 large Egg, White
16 oz Fresh Boneless Skinless Chicken Breasts
1 tbsp Vegetable Oil, Canola

Recipe Directions for Chicken ala General Tso

  1. Cook rice as described, leave alone.

  2. Stir together in a large bowl 2 tablespoons cornstarch and 1 cup cold water until smooth. Add vegetables, garlic, ginger, brown sugar, low sodium soy sauce, and red-pepper flakes. Toss to combine, and set aside.

  3. In another bowl, whisk together egg whites, remaining 3 tablespoons cornstarch, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add chicken, and toss to coat.

  4. In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Drop chicken piece by piece, cooking half at a time. Turning occasionally, until golden, 6 to 8 minutes.

  5. Transfer to a plate; repeat with remaining oil and chicken. Remove from skillet but keep skillet over heat.

  6. Cook vegetables until tender. If from frozen then cook ahead and simmer until sauce has thickened; 3 to 5 minutes.

  7. Return chicken and any drippings to skillet to coat with sauce.

  8. Serve over rice.
