Filipino braised chicken with tangy soy and vinegar sauce

Recipe Ingredients for Chicken Adobo

16 oz Boneless, Skinless Thighs
1 cup Soy Sauce
8 fl oz White Vinegar, Distilled, Organic
2 1tsp Olive Oil
9 tsp Sugars, Granulated
1 tsp, crumbled Bay Leaf
1 tsp Pepper, Black

Recipe Directions for Chicken Adobo

  1. Mix Soy Sauce, Vinegar, and sugar until sugar is dissolved. Taste and adjust to your preference with a bit more soy, vinegar or sugar; set aside.

  2. -Sprinkle both sides of thighs with ground pepper. Traditionally, a lot of pepper is used, but do according to your taste.

  3. -Heat oil in saute pan on medium/high and brown chicken on both sides (I prefer not to use a teflon/non-stick surfaces especially when braising with vinegar).

  4. -Reduce heat to medium/low and add minced garlic; cook for a minute or so until fragrant (do not scorch).

  5. -Add Soy Sauce mixture and tuck bay leaves around chicken so they are submersed in liquid.

  6. -Cover and reduce heat to low.

  7. -Simmer for about 30 to 40 minutes turning chicken 2 or 3 times during cooking. The sauce will thicken slightly, but will be on the thin side.
