Recipe Ingredients for Chicken Adobo (Heart Smart by Bonnie Stern)

1 tbsp Vegetable Oil, Canola
1 large Onions
4 Serving Chicken
3 clove Garlic
3 tbsp Lemon Juice, Canned Or Bottled
2 tbsp Soy Sauce
0.25 cup (8 fl oz) Water
0.5 tsp Pepper, Black
1 tsp, crumbled Bay Leaf

Recipe Directions for Chicken Adobo (Heart Smart by Bonnie Stern)

  1. Heat oil in a large, deep non-stick skillet on medium-high heat. Add onion (cut in 1/4-inch slices) and cook for 8 to 10 minutes, or until browned. Remove from pan.

  2. Add chicken (bone-in, skin removed), garlic (finely chopped), lemon juice (or white vinegar), soy sauce, water, and pepper to skillet. Stir everything together well. Add bay leaf. Cook gently, covered, for 25 to 30 minutes.

  3. Return onion to skillet. Continue to cook, uncovered, until chicken is cooked through and tender, about 5 to 10 minutes. Taste and adjust seasonings if necessary.
