Chick Peas & Eggplant Recipe

eggplant simmered with tomatoes and chick peas.

Recipe Ingredients for Chick Peas & eggplant

14 oz Peas Chick
14 oz can diced tomatoes
1 medium eggplant
1 clove garlic
1 tbl olive oil
1 salt and pepper to taste

Recipe Directions for Chick Peas & eggplant

  1. add oil to deep fry pan. heat and add garlic, saute garlic till soft, add peeled diced eggplant, give a quick stir. season with salt and pepper as desired (if desired) immediately add can of diced tomatoes with their juice. You can also season with some oregano at this point if desired. Cover and simmer until eggplant starts to wilt. Then add the can of drained and rinsed chick peas. Stir and cover and simmer about 40 minutes or until the eggplant is completely cooked down.

  2. I like to eat as a side dish, but have also topped with some low fat mozzarella and put into the oven or microwave to melt the cheese. Also good mixed with pasta alone or with melted mozzarella. Yummy. But keep in mind, the more you add, the more calories. ;-)
