Recipe Ingredients for Chick Pea Stew

2 tablespoons flax seed oil
1 cup diced onion
3 cloves garlic
2 1/2 cups chick peas
3 cups diced plum tomatoes
2 cups diced red peppers
1 teaspoon dried thyme
1 cup quinoa
2 tbsp tomato paste

Recipe Directions for Chick Pea Stew

Saute onions, garlic and red peppers till soft in flax seed oil. Add tomatoes, chick peas and tomato paste. Lower heat and simmer till thickens (about 10-15 minutes)
