A chickpea-based concoction, it relies on cucumber for freshness, onion for zest, and a smattering of feta cheese for tang (or, as some are wont to call it, ?feta-ey-ness?). Everything balances perfectly with the dressing.

Recipe Ingredients for Chick Pea Salad

31 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1 medium raw Onion Red
1 cucumber (8-1/4") Cucumber
2 oz Mint
4 oz Feta Cheese Crumbles
1/2 cup Parsley
1 NLEA serving(58 g) Lemons
10 olives Kalamata Whole Olives
3 tsp Classic Dijon Mustard
1 tbsp Olive Oil
3 clove Garlic

Recipe Directions for Chick Pea Salad

  1. Drain and rinse chick peas.

  2. Juice the lemon, chop onion, cucumber, mint, parsley & garlic. Crumble the feta.

  3. In a large bowl, toss chickpeas, onion, cucumber, mint, feta and parsley.

  4. In a small bowl, whisk lemon juice, olives, mustard, oil, and garlic together. Pour dressing on top of the chickpea mixture and stir gently until combined. Season with salt and pepper to taste, and feel free to add slightly more cheese, lemon juice, oil, salt, or pepper right before serving.

  5. Makes 8 1-cup servings.
