Soaking and cooking dry beans in water helps control the sodium. Salt is added only once the salad is put together.

Recipe Ingredients for Chick Pea Salad

2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1/3 medium Hothouse Cucumber
1/2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 serving Feta Cheese, Light (Selection)
4 oz Splendido White Balsamic Vinegar
1/4 tsp Salt

Recipe Directions for Chick Pea Salad

Chop cucumber and red pepper into 1/2" dice. Combine oil and vinegar, whisking to combine. Mix together all ingredients, pour dressing over and toss. Add S&P to taste.
