Nutritious, lots of fiber and protein. Nice to add roasted red bell peppers, chopped fresh red bell peppers or pimentos for color and added vitamins.

Recipe Ingredients for Chick Pea Salad

15 oz garbanzo beans, rinsed and drained
1 med cucumber, diced
3 tbsp olive oil
1 tbsp balsamic vinegar
1/4 cup chopped onion (I use the dehydrated to save time and tears)
1 tsp basil (I use Italian Seasoning)

Combine all ingredients, chill and serve.
