Recipe Ingredients for chick pea salad

3 1/2 serving Chick Peas Garbanzos
1 cup Quinoa
1/2 large Onions
4 large whole (3" dia) Tomatoes, Red, Ripe
6 cup Spinach
1 tbsp chopped Shallots
1 tbsp chopped Shallots
1 tbsp Vinegar red wine
3 tsp Greek Seasoning

Recipe Directions for chick pea salad

cook quinoa according to directions. chop onions, shallots, tomatoes and add to pot when quinoa is cooked. Rinse adn drain chick peas and add to pot over low heat. Wash and de stem spinach and put in pot. When the spinach is wilted, stir into the rest. Season to taste with greeks seasoning and red wine (or balsamic) vinegar.
