Tasty as a meal, lunch or side dish. The vinaigrette works well on grilled veggies and fish as well.

Recipe Ingredients for Chick Pea Salad with Garlic-Cumin Vinaigrette

19 oz Peas Chick
3/4 cup diced red onion
1 pepper jalapeno, minced
1/4 cup olive oil
2 tablespoons red wine vinegar
4 cloves garlic, minced
1/4 teaspoon salt
1/2 teaspoon pepper, fresh ground
2 tablespoons cumin seeds, crushed
10 sprigs cilantro, finely chopped
3 tablespoons basil, oregano, thyme, fresh, chopped, optional (I didn't use these)

Recipe Directions for Chick Pea Salad with Garlic-Cumin Vinaigrette

Mix vinaigrette in bowl. Chop onion and add with drained, rinsed chickpeas. Toss well to coat. Adjust seasoning if needed. Let sit for up 30 minutes if you can to allow the flavours to all play together and get friendly.
