This makes a great fresh chick pea salad (or hummus, if you throw it in the blender).

Recipe Ingredients for Chick pea salad (or fresh hummus)

3 cups cooked chick peas
1 green bell pepper
1 orange bell pepper
1/2 red onion
10 fresh parsley sprigs
3 T minced garlic
3 T fresh lemon juice
1 T red wine vinegar
2 T balsamic vinegar
3/4 cup olive oil
1/4 t salt
1/2 t pepper

Recipe Directions for Chick pea salad (or fresh hummus)

Chop onion and bell peppers. Mix with chick peas. Mix remaining ingredients together as dressing and pour over salad. Serve chilled as-is, or blend as hummus. Serve with salty crostini or pretzel twists.
