A light and vegetable-packed soup

Recipe Ingredients for Chick Pea, Quinoa & Broccolini Soup

1/2 tablespoon extra-virgin olive oil
1/2 teaspoon crushed red pepper flakes
2 cups broccoli
1 1/2 cups (1 12 oz can) chick peas
4 celery stalks, chopped
6 garlic cloves
3 medium carrots, chopped
1 medium red onion, chopped
2 cups vegetable broth
4 cups water
1/4 cup quinoa

Recipe Directions for Chick Pea, Quinoa & Broccolini Soup

  1. Cook quinoa and set aside.

  2. Heat olive oil.

  3. Cook celery, carrot and onion in the olive oil for a few minutes to bring out the flavor and to cook through.

  4. Add the red pepper flakes, garlic, broccolini and simmer for another 5 minutes.

  5. Add the beans, vegetable stock and water and bring to a boil.

  6. Add the cooked quinoa at the last minute
