very easy, low fat, quick alternative to spagetti. Great for a crowd

Recipe Ingredients for Chick Pea Pasta

14 oz whole wheat pasta
14 1/2 oz garbanzo beans
14 1/2 oz diced tomatoes (drained)
3 cloves garlic
1 tsp salt
1/2 cup chicken broth
1 tsp thyme
3 tbs olive oil
1 cup parmesean cheese

Recipe Directions for Chick Pea Pasta

  1. cook pasta

  2. chop chick peas in food processor (coarse)

  3. cook garlic in olive oil

  4. add chick peas and thyme and saute for a few min.

  5. add chicken broth and cook for a minute

  6. add tomatoes (can use crushed or diced)

  7. salt to taste.

  8. serve over pasta with parm.
