An interesting, healthy, low GI and high fibre take on chocolate cake. Dense and moist, the texture reminds of a brownie/pudding.

Recipe Ingredients for Chick Pea Chocolate Cake

300 grams Chick Peas
3 large Egg, Whole
1 tbsp Cocoa, Dry Powder, Unsweetened
0.13 tsp Sea Salt
1 oz (22 whole kernels) Almonds, Dry Roasted
2 tbsp Apricot Jam
27 teaspoon Granules
1 tsp Vanilla Extract
200 grams Swiss, 70% Cocoa

Recipe Directions for Chick Pea Chocolate Cake

  1. Preheat oven to 175 degrees Celsius.

  2. Mash/process chick peas to a smooth pulp.

  3. Beat in the eggs untill smooth.

  4. Add the salt, vanilla, baking powder, cocoa and Canderel and mix.

  5. Add melted chocolate and mix well.

  6. Add roughly chopped almonds and mix.

  7. Transfer to prepared baking pan and bake at 175 degrees Celsius for 40 minutes (the cake doesn't really rise, but "cracks" on top).

  8. Let cool, spread apricot jam on top and dust with Canderel granules/icing sugar.
