Chick peas, broccoli, carrot. Simple yummy veggie meal.

Recipe Ingredients for Chick Pea & Broccoli Casserole

240 g chick peas
1/3 onion
150 g carrot
100 g broccoli
50 g leek
2 tbsp sunflower oil

Recipe Directions for Chick Pea & Broccoli Casserole

  1. Mash chick peas.

  2. Add vegetables and mix

  3. Add oil and mix

  4. Add stock and mix

  5. Press into casserole dish (ceramic or glass are best) and cover with foil.

  6. Bake for 45 minutes at 180c.

  7. Remove foil.

  8. Bake for a further 15 minutes.
