Recipe Ingredients for Chicaquiles casserole

1 tbsp Vegetable Oil, Canola
200 grams Onions
15 oz Black Beans
14.5 oz Diced Tomatoes
3 ear, large (7-3/4" to 9" long) yields Corn, Sweet, White
1 tsp Cumin
0.5 tsp Salt, Table
19 oz Enchilada Sauce
6 serving White Corn Tortillas
1.25 cup Mexican Four Cheese Blend

Recipe Directions for Chicaquiles casserole

  1. Preheat oven to 400. Spray 13 x 9 pan with cooking spray. Rinse beans and drain tomatoes. Shuck corn.

  2. Heat oil in large skillet over medium high heat. Cook onion until lightly browned, about 5 minutes. Stir in corn, beans, tomatoes, cumin and salt and cook until the vegetables are softened, about 3 minutes.

  3. Quarter the tortillas and scatter 1/2 in the 13 x 9 pan. Top with 1/2 of the veggie mix, 1/2 of the enchilada sauce and 1/2 of the cheese. Repeat layers. Cover with foil.

  4. Bake for 15 minutes. Remove foil and continue baking 10 minutes or until cheese is melted.
