Recipe Ingredients for Chewy Oatmeal Raisin Cookies (Vegan)

3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup brown sugar
2 tablespoons maple syrup
1/4 cup applesauce
1/4 cup vegetable oil
1/2 teaspoon vanilla
1 1/2 cup oats
1/2 cup raisins

Recipe Directions for Chewy Oatmeal Raisin Cookies (Vegan)

  1. Preheat oven to 350 degrees.

  2. Measure and mix all wet ingredients, including the brown sugar, in a bowl.

  3. Measure out all dry ingredients, except the raisins, into the same bowl of wet ingredients.

  4. Combine the two till well incorporated.

  5. Next fold in the raisins.

  6. Use a small scoop, about 2 tsp or 1 tbsp, and measure out the cookies onto a greased baking sheet. I got about 19 golf ball sized cookies, but if you want them bigger feel free to make them bigger. Also they do not spread at all so if you want a flat cookie press them down with the back of a spoon or your hand.

  7. Bake for 10-11 minutes for that chewy center or up to 14 minutes if you don't want that gooey center.

  8. After they have baked let them cool on the pan for a bit till firm enough to transfer to wax paper to fully cool.

  9. Enjoy with a glass of soy or almond milk (or cow's milk if you're not vegan or lactose intolerant).
