Adapted from Taste of Home-Comfort Food-Diet. The original recipe called for twice as much sugar and chocolate chips. I've also used Quinoa flour in place of 2/3 of the white flour.

Recipe Ingredients for Chewy Granola Bars

1/2 cup butter
1/2 cup brown sugar
4 tbsp Honey
1 tsp vanilla
1 egg
2/3 cup Quinoa Flour
1/3 cup all purpose flour
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cup old fashioned oats
1 1/4 cup Crisp Rice Cold Cereal
1 cup slivered almonds
1/2 cup chocolate chips

Recipe Directions for Chewy Granola Bars

  1. Cream butter, sugar and honey until light and fluffy

  2. Add vanilla and egg and mix well.

  3. Combine flours, cinnamon, baking powder and salt. Add to butter mixture.

  4. Stir in Oats, cereal nuts and chocolate chips.

  5. Press into greased 13x9 pan and press evenly. Bake at 350 for 20-25 minutes until top is lightly browned. Cool on wire rack. Cut into 18 bars.
