Rich chestnut soup for cold winter nights. This is a very rich soup and will serve as a main dish.

Recipe Ingredients for Chestnut Soup

1 medium (2-1/2" dia) Onions
3 tbsp Butter
8 oz Chestnuts (Raw)
0.5 cup, fluid (yields 2 cups whipped) Cream, Fluid, Heavy Whipping
60 grams Celery
3 cup Chicken Broth
1 cup, chopped Carrots
2 tbsp Parsley
0.5 tsp Sea Salt
2 serving Cooking Wine
1 tsp Poultry Seasoning
0.5 tsp, ground Basil, Dried
0.13 tsp Cayenne Pepper

Recipe Directions for Chestnut Soup

  1. Cook onion and celery in a saucepan in butter until tender. Stir in the broth, chestnuts, carrot, parsley, poultry seasoning, salt, basil, and red pepper. Simmer, covered, for 20 minutes. Cool slightly.

  2. Using a blender or immersion blender, puree the soup until smooth. Stir in cream and cooking sherry. Heat through, but to do not boil. Top each serving with sour cream and chives, if desired.
