1900's pie recipe, very rich best served warm/hot

Recipe Ingredients for Chess Pie

2 cups sugar
2 tbsp white cornmeal
2 tbsp flour
3 eggs, beaten to blend (whisk)
1 cup fat free half and half
1 stick unsalted butter
1 tsp vanilla
1/4 tsp salt
1 pie crust

Recipe Directions for Chess Pie

  1. Preheat oven to 425 degrees

  2. mix sugar, cornmeal and flour in large bowl

  3. stir in whisked eggs

  4. blend in half and half, butter, vanilla and salt

  5. pour into pie shell

  6. bake 15 minutes

  7. reduce oven temp to 375 and continue to bake until puffed and golden 45-50 minutes

  8. cool pie to room tmep before slicing and serving

  9. Note: if making tarts just pour into tart shells instead of pie crust

  10. Note: can add crushed pineapple and omit vanilla for pineapple tarts.
