Great flavorful low fat side dish.

Recipe Ingredients for Cheryl's Lentils and Veggies

1 cup Natural Goodness Chicken Broth
1 cup Lentils, Mature Seeds
16 oz Squash, Summer, Zucchini, Includes Skin
8 oz Carrots
1 small Onions
2 cloves, raw Garlic

Recipe Directions for Cheryl's Lentils and Veggies

  1. Cook lentils in 3 cups of water 45 minutes.

  2. Saute onions and garlic until translucent.

  3. Add Shredded veggies and cook 5 minutes.

  4. Add veggies and broth to lentils and cook 5 additional minutes.

  5. Season to taste.

  6. Add a splash of lemon juice.

  7. Serve hot as a side dish.
