Recipe Ingredients for Cherry & White Chocolate Muffins

2 cups plain flour
1 tablespoon baking powder
50 grams caster sugar
1/2 cup eggbeaters
1/2 cup skim milk
80 grams margarine, melted and cooled
200 grams frozen cherries
100 grams white chocolate

Recipe Directions for Cherry & White Chocolate Muffins

  1. Mix together the plain flour, baking powder and sugar and then sift into a bowl.

  2. Lightly whisk the eggs with the milk before stirring through the melted butter.

  3. Pour into the flour mixture and stir until just combined - add the frozen cherries and chocolate and stir very briefly. The batter will develop a delicate pink hue from the cherries.

  4. Scoop out into muffin cases - fill them about three-quarters full.

  5. Sprinkle each muffin with a little pearl sugar if desired.

  6. Bake in a preheated 180C/350F for about 20-25 minutes or until risen and golden brown.

  7. Cool slightly in the pan before moving to a wire rack to cool completely.

  8. When warm they are a bit crumbly mainly due to the half melted chocolate but taste wise, you'll probably enjoy them more in this state.

  9. Split them open and you'll find those large pieces of chocolate just calling out your name, in fact this one is screaming for me at the moment!
