Recipe Ingredients for Cherry Tomato Lollipops

24 cherry tomatoes
1 small avocado
1 tablespoon lime juice, fresh
1 teaspoon salt
2 ounces cheese, jalapeno diced into 24 pieces

Recipe Directions for Cherry Tomato Lollipops

  1. With a serrated knife, cut 1/4 inch off the top of each tomato. With a melon baller, scoop out the seeds leaving the shell of the tomato intact.

  2. In a small bowl mash together avocado, lime juice and coarse salt. Spoon about 1/2 teaspoon avocado mixture into each tomato. Top with a piece of cheese. Skewer to make into a lollipop.
