Semolina Durum pasta is jam-packed with fiber and protein, and is the best choice you can make in terms of picking a wheat pasta. Indeed, it doesn't even have that grainy taste of standard "whole wheat pasta", but offers all of that and more! Note- cooking time on the pasta seems to be noodle specific, so test out a few before deciding the pasta is done cooking.

Recipe Ingredients for Cherry Tomato Basil Semolina Pasta

2 cup leaves, whole Basil, Fresh
50 ea. Raw Tomato Cherry
4 clove Garlic
4 tbsp Extra Virgin Olive Oil
4.53 Serving Gemelli Durum Wheat Pasta
0.75 cup Parmesan, Grated Cheese

Recipe Directions for Cherry Tomato Basil Semolina Pasta

  1. Wash the basil well by first rinsing the leaves, and then soaking in a bowl of water (or sink basin) to remove all grains of sand. When clean, dry well.

  2. Wash and drain the cherry tomatoes, and then cut them in half. Chop the garlic very finely. Grate the parmesan using the fine holes on the graters. When you are ready to begin cooking, chop the basil finely.

  3. Heat a large pot of water to boiling, flavoring it with 1 Tbsp salt.

  4. In a large skillet, heat the olive oil over medium heat. When it becomes fragrant, add the garlic and stir constantly for 1-2 minutes, adding the cherry tomatoes before the garlic browns.

  5. Season with pepper and allow the tomatoes to bubble away, stirring every few minutes, until the tomatoes are softened and a sauce has been formed (about 10-15 minutes).

  6. When you water is boiling, add the pasta and cook until tender but still has a bite (al dente), about 10-12 minutes.

  7. Add the basil to the pasta and season to your taste with salt (about 1/2-1 Tsp). A little sugar may also be requred (1/2 Tsp).

  8. When the pasta is cooked, drain well, and then add to the tomato sauce. Cook the pasta in the sauce, turning it over to mix well, for 1-2 minutes. Then serve on warmed bowls, topping with a generous sprinkle of parmesan.
