Recipe Ingredients for Cherry Tomato Basil Quiche

20 ea. Raw Tomato Cherry
2 serving Giant Fresh White Eggs, Large
3 large Egg, White
4 oz 2% Partly Skimmed Milk
0.75 cup Parmesan, Grated Cheese
0.67 cup leaves, whole Basil, Fresh
3 clove Garlic
2 tbsp chopped Shallots
0.5 tsp Pepper, Black
0.33 tsp Kosher Salt
1 crust Pie Crusts

Recipe Directions for Cherry Tomato Basil Quiche

  1. Preheat the oven to 350'F.

  2. Place tin foil in the pie crust and weigh it down with baking weighs or dried beans. Bake the crust until golden, about 20 minutes, poking fork holes around the bottom to let out steam.

  3. Halve the cherry tomatoes. Grate the cheese. Finely chop the shallots and garlic. Beat the eggs.

  4. Combine the basil, shallot, cheese, garlic, salt, pepper and milk with the eggs and mix well.

  5. When the crust is done, add the egg mixture. Then gently place the halved tomatoes cut side up on the quiche. Place on a rimmed baking sheet (in case it bubbles over) and put in the oven.

  6. Bake for 45 minutes. Test the center for residual liquid with a knife. If there is a significant amount, turn up the oven to 400'F and bake for another 1 minutes.

  7. After removing the quiche from the oven, let it rest for 7-10 minutes so the eggs fully set and it is easy to cut.

  8. Divide into 6 even pie slices and remove from pan with a spatula.
