Recipe Ingredients for Cherry Tomato and Asparagus Frittata

1 Salt and Pepper
12 Organic Eggs
3 ounces Parmesan
1/2 cup Basil Leaves
1 1/2 teaspoon Fresh Thyme
1 1/2 Garlic cloves
1 1/2 tablespoon Olive Oil
12 Cherry Tomatoes
12 Asparagus spears

Recipe Directions for Cherry Tomato and Asparagus Frittata

  1. 1. Preheat oven to 400 F.

  2. 2. Add eggs, Parmesan cheese, cup basil, fresh thyme, and garlic to a medium bowl.

  3. 3. Stir lightly with a fork.

  4. 4. Add olive oil to an oven-proof skillet. Heat over medium heat.

  5. 5. Add egg mixture to hot skillet. Stir eggs gently with wooden spoon.

  6. 6. Stir in cherry tomatoes and asparagus pieces.

  7. 7. Continue cooking until eggs are set.

  8. 8. Top with the Fontina cheese and place skillet in oven for 60 seconds.

  9. 9. Remove from oven.

  10. 10. Remove frittata to warm plate.

  11. 11. Cut into wedges. Sprinkle with remaining basil and serve.
