Broiled and cherry-stuffed chicken breasts. For the skewers, I recommend breaking the handle off a cheap fork.

Recipe Ingredients for Cherry Stuffed Chicken Breasts

1/3 cup, without pits sweet cherries, pitted and coarsely chopped
1/16 cup onions, chopped
1/4 teaspoon sage, chopped
1/8 teaspoon salt
1/8 teaspoon thyme, chopped
6 oz chicken breast
1/2 tablespoon olive oil
1/2 tablespoon white vinegar
1/2 teaspoon garlic salt
1/8 teaspoon pepper, coarsely ground

Recipe Directions for Cherry Stuffed Chicken Breasts

  1. Mix the cherries, onions, sage, salt, and thyme together.

  2. On the thicker side of the chicken, cut a pocket in it along the entire length of the chicken.

  3. Stuff the cherry mixture into it and close the openings with metal skewers.

  4. Mix the oil, vinegar, garlic salt, and pepper together and marinate the chicken with it in the refrigerator for half an hour.

  5. Broil the chicken, brushing it periodically with the marinade until browned and fully cooked (about an hour).
