Recipe Ingredients for Cherry Muffins

10 oz maraschino cherries (1 jar)
1 3/4 cup flour (all purpose)
1/2 c granulated sugar
2 1/2 t baking powder
1 t lemon peel, grated
3/4 t salt
1 egg
1/2 c milk
1/3 c corn oil
1 t almond extract
1/4 c chopped almonds

Recipe Directions for Cherry Muffins

  1. Preheat oven to 400 degrees.

  2. Reserve 1/4 c cherry juice, drain and coarsely chop cherries.

  3. In a large bowl, stir together flour, sugar, baking powder, lemon peel,and salt.

  4. Make a well in the center of the dry ingredients.

  5. In a small bowl, whisk reserved cherry juice, egg, milk, oil and almond extract.

  6. pour egg mixture into well in dry ingredients.

  7. Stir just until moistened.

  8. Stir in cherries and almonds.

  9. Spoon batter into a paper lined muffin pan, filling each 3/4 full.

  10. Bake 18-20 minutes or until edges are lightly browned.

  11. Transfer to a wire rack to cool completely.

  12. Store in an airtight container.
