Recipe Ingredients for Cherry Coconut Wedges

1 cup white flour
1/4 cup wheat germ
1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp cinnamon
1 1/2 cups flaked coconut
1/2 cup oats
1/2 cup corn oil
3/4 cup maple syrup
2 eggs
2 tsp vanilla extract
1/4 cup walnuts
1/4 cup dried cherry

Recipe Directions for Cherry Coconut Wedges

  1. Preheat oven to 350 F. Line 9 x 13 inch pan with parchment.

  2. Sift flour, baking powder, baking soda, and spices together in a bowl. Stir in coconut, oats and pecans.

  3. Beat the oil and maple syrup. Add the eggs and vanilla.

  4. Stir the dry ingredients into the oil and egg mixture. Spread the mixture into the pan.

  5. Bake for 12 to 15 minutes. Cut into wedges and transfer to wire rack to cool.

  6. Store in airtight container.

  7. Makes 2 Dozen.
