I found this recipe online,and it looked fairly healthy.I did cut back on the sugar and substituted the oats for white flour.Love how it turned out!

Recipe Ingredients for Cherry Cobber

2 T. cornstarch
1/4 tsp. cinnamon
3/4 cup water
2 cups cherries,frozen

Topping:
1 1/2 cups oatmeal
2 T. sugar
2 tsp. baking powder
1/2 tsp.salt
3 T. shortening
1/2 cup milk

Recipe Directions for Cherry Cobber

  1. In large saucepan, combine the cornstarch and cinnamon.Stir in water until smooth.Add the cherries and butter.Bring to a boil over medium heat;cook and stir for two minutes or until thickened.Pour into and 8-inch baking pan and set aside.

  2. Grind your oatmeal in a blender,1/2 cup at a time.Combine oatmeal flour,sugar,baking powder,and salt.Cut in shortening until mixture resembles coarse crumbs.Stir in milk just until moistened.Drop by spoonfuls over the cherries.

  3. Bake at 400 for 30-35 minutes or until golden brown.
