Recipe Ingredients for Cherry Clafoutis

4 cups fresh cherries
2 large eggs
1 egg yolk
1/4 cup raw sugar
1 oz. corn starch
1 oz. whole wheat flour
2 tbsp flaxseed meal
12 oz. (1.5 cups) unsweetened soymilk
1 packet vanilla sugar

Recipe Directions for Cherry Clafoutis

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Wash the cherries and remove the pits.

  3. Beat the eggs and yolk with the sugar. Add the vanilla sugar and mix.

  4. Dilute the cornstarch in a bit of the milk. Add the flour, flaxseed meal and cornstarch to the previous preparation, along with the rest of the soy milk. Mix well until homogeneous.

  5. Grease a large dish (9" x 9") and sprinkle with sugar, removing the excess.

  6. Add the cherries in the dish, and pour the cream mixture over them.

  7. Place in the oven for 40 to 45 minutes or until golden. Remove. Eat lukewarm or cold.
