Recipe Ingredients for Cherry Chicken Salad

2 cups chicken breast, cubed
1/2 cup dried cranberries
1/4 cup chopped walnuts
3 green onions, sliced
1/2 cup mayonnaise
1/4 cup plain yogurt
1 tablespoon lemon juice
1/2 teaspoon dried oregano
1 Freshly ground pepper to taste

Recipe Directions for Cherry Chicken Salad

In a large bowl, combine chicken, cherries, walnuts, and onions. In a small bowl, combine mayonnaise, yogurt, lemon juice, oregano, and pepper; blend well and pour over chicken mixture. Toss gently. Cover and refrigerate for 1-2 hours. Serve on Lettuce leaves. Garnish with chopped fresh parsley, if desired.
