Heat oven to 350 degrees. Grease 13 X 9 pan.

Recipe Ingredients for Cherry Cheese Bars

1 cup walnut pieces, divided
1 1/4 cups rice flour
1/2 cup brown sugar
1/2 cup butter
1/2 cup coconut
16 oz cream cheese, softened
2/3 cups sugar
2 eggs
2 teaspoon vanilla
21 oz (1 can) cherry pie filling

Recipe Directions for Cherry Cheese Bars

  1. For the Base:

  2. Combine flour and brown sugar in medium bowl. Cut in butter until fine crumbs. Add 1/2 cup finely chopped nuts and coconut. Mix well. Reserve 1/2 cup crumbs for topping. Press remaining crumbs in bottom of pan. Bake at 350 degrees for 12 to 15 minutes, or until edges are lightly browned.

  3. For the Filling

  4. Combine cream cheese, sugar, eggs, and vanilla in small bowl. Beat at medium speed of mixer until well blended. Spread over hot baked base. Return to oven bake 15 minutes. Spread cherries over cheese layer.

  5. Combine reserved coarsely chopped nuts and reserved crumbs. Spread over pie filling. Return to oven. Bake for 15 minutes. Cool in pan on cooling rack. Refrigerate several hours. You may substitute another fruit pie filling for the cherry pie filling.
