A Healthier Version of the Simple Scones recipe

Recipe Ingredients for Cherry-Almond Scones

1 cups all-purpose flour
1 cup self-rising flour
1/3 cup Benefiber
2 tbls + 2 tsp SPLENDA Sugar Blend for Baking
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
8 tbls 48 % Buttery Spread - Original, frozen
3/4 cup Craisins, Cherry Flavor Sweetened Dried Cranberries
4 oz Lowfat Plain
1 large egg
1/3 cup chopped Almonds
1 tsp Almond Extract

Recipe Directions for Cherry-Almond Scones

  1. Adjust oven rack to lower middle position and preheat oven to 400 degrees.

  2. In a medium bowl, mix flour, sugar, baking powder, baking soda and salt and benefiber. Whisk together til blended.

  3. (The recipe uses 2 cups of all-purpose flour but I only had 1 of each. You can also substitute wheat flour for one of the cups of flour to make it a little more healthy.)

  4. Grate frozen butter into the dry mixture.

  5. Work it into the flour mixture until the mix becomes like coarse meal.

  6. (I just melted the butter and it worked out fine)

  7. Add Craisins and Almonds.

  8. In a small bowl, whisk together the Yogurt, Almond Extract and egg until smooth.

  9. Using a fork, stir the creamed mixture into flour mixture until large dough clumps form.

  10. Using your hands, press the dough against the bowl into a ball. The dough may be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.

  11. Place on a lightly floured surface and pat into about an 8 inch circle that's about 3/4in. thick.

  12. (I then spread an egg white on top and sprinkled with sugar.)

  13. Using a sharp knife, cut into 8 triangles and place each one on a cookie sheet lined with parchment.

  15. Cut each piece in half to make 16 pieces and separate about an in. apart.

  16. Bake until golden, about 15-17 min.

  17. Cool for 5 min. and serve warm or at room temp.
