Recipe Ingredients for Cherry Almond Macaroons

2 eggs, separated
1/8 tsp. salt
3/4 cup sugar
144 g shredded coconut (1.5 cups)
3/4 cup flour
150 g chopped glace cherries (3/4 cup)
3/4 tsp. almond extract

Recipe Directions for Cherry Almond Macaroons

  1. Preheat oven to 350 F (180 C).

  2. Beat egg yolks in a large mixing bowl.

  3. Stir in coconut.

  4. Add flour, cherries and almond extract. Mix well.

  5. In a separate (small) bowl, beat egg whites until foamy. Gradually add sugar, beating until very stiff.

  6. Add egg whites to coconut mixture. Mix well. Mixture will be very stiff.

  7. Drop by tablespoonfuls onto nonstick baking sheets.

  8. Bake for 10-15 minutes, or until set and the edges are very light golden.
