A healthy (but NOT lowfat) homemade granola bar.

Recipe Ingredients for Cherry Almond Dark Chocolate Granola Bar

1 1/2 c old fashioned oats
1 c quick cooking oats
1/2 c wheat germ
1 c almonds
1/4 c flax seeds
1 c rice krispies cereal
1/2 c honey
2 tbl unsalted butter
1/2 tsp salt
1 tsp vanilla
1/2 c almond butter
1/2 c dark chocolate chips
1/2 c Dried Cherries

Recipe Directions for Cherry Almond Dark Chocolate Granola Bar

  1. Preheat oven to 350.

  2. Place oats, wheat germ, & flax seeds on a baking sheet. Place almonds on a separate sheet. Put in oven and toast for 10 minutes. Add rice krispies to oat mixture, stir up both baking sheets, and toast another 10 minutes.

  3. Meanwhile, heat honey, butter, and salt in a small saucepan over medium heat, stirring frequently until salt and butter are incorporated. Remove from heat and add vanilla and almond butter. If almond butter is homemade, add a few tablespoons of water to loosen up the mixture.

  4. When toasting is complete, remove from oven and turn oven down to 300. Coarsely chop the almonds and combine with oat mixture.

  5. Allow both the dry and wet mixtures to cool slightly.

  6. Stir together very well with a large wooden or plastic spoon - this may take awhile. Make sure all the dry ingredients have been coated with the honey mixture. Then add the chocolate and cherries until just mixed (mixing too much will melt the chocolate).

  7. Spread into a 9x13 glass baking dish coated with cooking spray. Press firmly with the back of a spatula.

  8. Bake 25 minutes, rotating the baking dish once during cooking.

  9. Allow to cool before cutting.
