Yeast= Instant Dry Yeast. I altered the amount of raisins and removed the currants. Prep Time: 20 minutes, plus mixing and kneading time in bread machine, plus rising. Cooking Time: 25 to 30 minutes. Makes 12 buns

Recipe Ingredients for Chelsea Buns, variation (The Bread Machine Bible)

7 tbsp milk
1 extra-large egg, lightly beaten
1 1/2 cups white bread flour
1/2 tsp salt
2 tbsp sugar
4 tbsp butter, diced
1 tbsp yeast
1/2 cup golden raisins
1/4 cup light brown sugar
1 1/2 tsp ground cinnamon
2 tbsp honey

Recipe Directions for Chelsea Buns, variation (The Bread Machine Bible)

  1. Whisk the milk and egg together in a bowl and pour into a bread pan. Sprinkle the flour over, covering the liquid completely. Place the salt, sugar, and 2 tablespoons of the butter in separate corners of the pan. Make a small indent in the middle of the flour and add the yeast. Close the lid, set the machine to "Dough," and press start.

  2. Grease a 7-inch square cake pan and set aside. When dough is ready, remove it from the machine and punch it down on a lightly floured surface, then roll it out into a 12- x 9-inch rectangle.

  3. Melt the remaining butter and brush it over the dough. Combine the dried fruit, brown sugar, and cinnamon and sprinkle evenly over the dough, leaving a 1-inch border around the edges.

  4. Starting from a long side, roll up the dough fairly tightly, like a jelly roll. Cut into 12 even slicesnd place, cut-sides up, in the pan. Cover and leave to rise in a warm place until double in size.

  5. Preheat the oven to 375 degrees fahrenheit. Bake the buns 25 to 30 minutes, or until risen and golden brown. Remove from the oven and brush twice with honey while still hot. Cool slightly, then turn out onto a wire rack. Serve warm or cold.
