My friend made this for us while we were visiting her; she used white pasta noodles (penne or similar) and it was GREAT; when I got home, though, subbed spaghetti squash for pasta. The result is a very fresh, tasty bowl of vegetables. -- if it tastes a little bland, salt and pepper are your keys.

Recipe Ingredients for Chef's Favorite Italian Vegetable Medley

6 cups Spaghetti Squash
1 eggplant
2 Zucchinis
4 cloves garlic
4 oz baby portabello mushrooms
4 tbs olive oil
1 salt to taste
1 pepper to taste
1 tsp rosemary
2 tsp Italian seasoning
24 oz Tomatoes
8 kalamata olives
8 jumbo green olives
12 rings Banana Peppers
6 oz feta

Recipe Directions for Chef's Favorite Italian Vegetable Medley

  1. Cook spaghetti squash in the oven: puncture the squash, place on a lined baking sheet, and cook for 1 hour at 375 F until the skin is soft. (tip: once cooled completely cut the squash the short way, not lengthwise, before scooping out the seeds and then scraping out the 'noodles' -- the noodles will be longer that way). Discard seeds or bake them for a tasty treat.

  2. Heat oil in a large skillet. Chop all vegetables and add veggies and garlic to the pan. Sautee until softened, adding the seasonings along the way.

  3. Once everything is tender and smells fragrant, add the tomatoes, olives, and pepperocini/bellpeppers.

  4. Cook until heated through.

  5. Add crumbled feta, then the spaghetti squash noodles at the end. Everything should be served warm.
