1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons unsalted butter, melted

Recipe Directions for Chef John's Good Old Fashion Pancakes

  1. Sift together all dry ingredients including salt and sugar.

  2. Beat an egg and add to the dry ingredients

  3. Add the melted butter and cold milk. Whisk immediately.

  4. Heat a pan or griddle on med-high. Oil pan/spray with cooking spray.

  5. Pour on batter to form pancakes. 1/4 cup per pancake is recommended.

  6. Serve hot or warm.
