Recipe Ingredients for Chef John's Aioli

1 clove garlic
1 kosher salt
1 egg yolk
2 tsp lemon juice
1/2 cup olive oil

Recipe Directions for Chef John's Aioli

  1. Cut off root end of garlic.

  2. Crush and peel garlic. Continue crushing and chopping garlic until pureed.

  3. Add kosher salt or sea salt while pureeing

  4. Add one raw egg yolk, the lemon juice and whisk together Add a little olive oil and whisk until thick.

  5. Add the rest of the olive oil and continue whisking.

  6. Serve as a dip or spread on bread. Add to salad dressings or eat with meat.
