When crabs are in season in south Louisiana (which is normally the summer months,) Creole tomatoes are also hanging heavy on the vine. There's no better time than now to create this magnificent pasta than now. If you like a little spice in your pasta, try adding 1/8 teaspoon of red pepper flakes or even a finely minced Tabasco pepper.

Recipe Ingredients for Chef John Folse Lump Crab & Creole Tomato Linguine

2 cup Jumbo Lump Crab Meat
16 oz Healthy Harvest Linguine
2 oz 100% Extra Virgin Imported Olive Oil
2 oz 100% Extra Virgin Imported Olive Oil
4 pieces Garlic Cloves
2 oz Shallots
0.25 cup Parsley
2 tsp, ground Basil, Dried
1 cup Petite Cut Diced Tomatoes

Recipe Directions for Chef John Folse Lump Crab & Creole Tomato Linguine

  1. In a heavy sauce pan, heat olive oil and saute garlic (cloves are sliced) and shallots (shallots are minced) for 1-2 minutes.

  2. Add herbs and tomatoes. Cook an additional 2 minutes.

  3. Slowly add half & half, whisking constantly and bring to a boil.

  4. Reduce to simmer, and add half of the crab meat to flavor the sauce.

  5. Cook until slightly thickened, stirring often.

  6. When the sauce holds to the back of the spoon, gently fold in the other half of the crab meat.

  7. Cook an additional 2-3 minutes, just to heat the meat through.

  8. Season to taste using salt and pepper. Toss with cooked linguine.
