A stir fry of purple potatoes and chicken in olive oil

Recipe Ingredients for Chef Edward's Purple Potato and Chicken stir fry

12 oz Potatoes, Red, Flesh And Skin
8 oz Boneless Skinless Chicken Tenderloins
1 medium (2-1/2" dia) Onions
1 oz Extra Virgin Olive Oil
2 tsp Pepper, Black
1 tsp Sugar Light Brown
1 tsp Sea Salt

Recipe Directions for Chef Edward's Purple Potato and Chicken stir fry

  1. Marinate chicken in half of olive oil with half of black pepper and 2 pinches of salt and brown sugar in a large zip loc bag.

  2. Dice purple potatoes and par boil. chop red onion and preheat large skillet with small part of olive oil.

  3. Begin frying onions, add potatoes. When almost done add chicken including marinating oil.

  4. Fry this until chicken is done but still tender.
