Recipe Ingredients for Cheezy Potato Soup

6 medium red potatoes
1 c. chopped carrots
1 1/2 c. chopped celery
1 c. butter
2 T. butter for sauté
1 1/2 c. chopped onions
1 1/4 c. flour
4 c. half and half, warmed
4 c milk, warmed
2 T. chicken stock
2 c. hot water
1/2 lb. American cheese
1/2 tsp. pepper
1/2 tsp. seasoned salt
1/4 tsp. red pepper

Recipe Directions for Cheezy Potato Soup

  1. Boil potatoes until soft. Drain and reserve liquid. Cool potatoes slightly, then peel and chop into small pieces. Set aside

  2. Meanwhile, in a medium saucepan cook carrots and celery in water until soft, about 10 minutes. Drain and discard water, or save as part of the 2 C. of hot water needed later. Set vegetables aside.

  3. In a small sauté pan, sauté onions in the 2 T. butter until golden brown. Remove from heat and set aside.

  4. In a large pot, melt the 1 C. butter. Add flour to make a roux and cook over medium heat until golden brown, 3-4 minutes. Add warmed half and half, and milk to roux and whisk until incorporated. Add soup base and hot water. Add cheese and cook over medium heat until cheese melts and mixture thickens, 10-15 minutes. It should be the consistency of a thick cream soup. Add reserved potatoes, vegetables and seasonings. Adjust seasonings to taste. If soup is too thick, thin with the reserved potato water.
