So friggin' good. From "Skinny Bitch in the Kitch". I use vegan cheese, but it wasn't in the data base. Follow Your Heart is a good brand.

Recipe Ingredients for Cheezy Cream of Broccoli Soup

1 tbsp olive oil
1 large onion
4 cups broccoli florets
2 tsp sea salt
1 tsp pepper
1 1/2 cups vegetable broth
4 cups rice milk
1/4 cup arrowroot
6 ounces low fat cheese

Recipe Directions for Cheezy Cream of Broccoli Soup

  1. Heat oil in a 4-6 quart stockpot over medium heat. Add the onion and cook, stirring occasionally, for 2 minutes. Add the broccoli, salt, pepper, and cook, stirring occasionally, until the onion is translucent and the broccoli is tender crisp, about 4 minutes.

  2. Stir in stock, increase heat to high, bring to a boil, and reduce the heat to a simmer. Cook until the broccoli is very tender, about 10 minutes. Remove from heat and stir in about 1 cup of rice milk.

  3. Blend until smooth, or to your preference. Return to medium-high heat, stir in remaining rice milk.

  4. Dissolve arrowroot powder in 1/4 cup cold water.

  5. When the soup returns to a simmer, add the arrowroot mixture and cheese, stirring until the cheese melts.
