Recipe Ingredients for Cheesy Zucchini Bake

2 lb. zucchini, thinly sliced
4 oz. sliced mushrooms, undrained
1 tbsp butter
2 eggs, separated
8 oz. sour cream
2 tbsp. all-purpose flour
1/2 tsp. salt
1 1/2 cups Cheddar cheese, shredded
6 slices bacon
1/4 cup fine dry bread crumbs
1 tbsp. butter, melted

Recipe Directions for Cheesy Zucchini Bake

  1. Preheat oven to 350.

  2. In a large skillet, sautee zucchini, mushrooms in butter. Simmer over medium heat until tender.

  3. Beat egg yolks - add sour cream, flour and salt. Stir until blended.

  4. Beat egg whites until stiff. Fold into sour cream mixture.

  5. In a large baking dish, layer half the zucchini mixture, half the sour cream mixture, half the cheese and bacon.

  6. Repeat layers.

  7. Combine bread crumbs and melted butter. Sprinkle over casserole.

  8. Bake at 350 degrees for 25 minutes. Serves 6.
