Makes 8 servings



It is suppose to have 6 egg whites and 2 eggs. I only had 5 eggs so I used 4 whole and one egg white. Added more calories per serving this way.

Recipe Ingredients for Cheesy Vetetable Frittata

4 eggs
1 egg white
3 teaspoons olive oil
1 medium onion
2 medium bell peppers
8 ounces sliced mushrooms
3 plum tomatoes
1 tablespoon minced garlic
1 1/2 cups shredded cheddar cheese
2 tablespoons basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons Parmesan Cheese

Recipe Directions for Cheesy Vetetable Frittata

Chop up vegetables mix with eggs and back at 400 for 25 minutes. More instructions than this, but I am being lazy.
