Recipe Ingredients for Cheesy Veggie Tuna Mini-Loaves

1 cup rice, cooked
50 grams mild cheddar
3 oz tuna
2 tsp parsley flakes
1/4 tsp salt
50 grams onion, chopped
4 grams garlic, chopped
20 grams red pepper, finely diced
10 grams baby spinach, chopped
22 grams mushrooms, chopped
36 grams zucchini, diced
2 tbsp egg beaters
1 tbsp mayo, light
1 tbsp lemon juice

Recipe Directions for Cheesy Veggie Tuna Mini-Loaves

  1. Saute onion, garlic, mushrooms, and zucchini in Pam. Once cooked through, add in red peppers and spinach. Set aside.

  2. Combine rice, cheese, tuna, parsley, salt, and veggie mixture. Add in egg beaters, milk, mayo and lemon juice.

  3. Grease 6-12 muffin cups with Pam. Divide rice mixture evenly.

  4. Bake in 375 oven 15 minutes.
