Recipe Ingredients for Cheesy Vegetable Pasta

50 g broccoli florets
55 g red pepper
60 g zucchini
20 g light cream cheese
20 g fage 0%
2 tsp. parmesan
1 salt and pepper, to taste
50 g dry whole wheat pasta
15 g pine nuts
1 cup spinach
1 tbsp skim milk

Recipe Directions for Cheesy Vegetable Pasta

  1. Cook pasta according to instructions on the packet. Drain, retaining a tiny bit of water to keep it moist, and set aside.

  2. Toast pine nuts in dry pan until golden.

  3. Steam all vegetabbles until just tender.

  4. Next, place pasta in a microwave-safe bowl, and top them with the cream cheese, yoghurt and parmesan topping. Then microwave for one minute.

  5. Stir well, add spinach, and then microwave for one additional minute, with the skim milk if mixture appears dry.

  6. Combine with the vegetables and season well with salt and pepper.
